What's for dinner? Vegetarian Taco's!

Since having my back surgery I've still been eating vegetarian meals while recovering. There are so many versions of meatless tacos and I thought I would share mine!

Ingredients:
2 ripe Avocado's
1/4 cup diced leek(you can you onion)
Shredded Mexican Cheese
Diced Black Olives
Cherry Tomatoes
Tortilla Shells

Directions:
Cut avocado's in half remove pits scoop out and mash in a bowl. Dice leek or onion and mix into mashed avocado. I added about 6 diced cherry tomatoes to this as well. Spread avocado mix on tortilla shell top with more tomatoes(if you'd like), diced black olives, and shredded Mexican cheese. Enjoy!



Easy to make and takes maybe 10 minutes tops! I'm aware if you are only making food for yourself then that's probably a lot of avocado. I only ate 2 taco's and used about a  tablespoon per taco so I will be using the leftovers for a snack later or lunch tomorrow.
